Instructions

- Add broth & season: Pour in beef broth along with bay leaves and thyme. Return the seared beef to the pot. Bring to a gentle boil.
- Simmer: Cover and reduce heat to low; let it simmer for about 2 hours until beef is fork-tender.
- Add potatoes: Stir in diced potatoes and cook for an additional 30 minutes until tender.
