Ingredients

Scale
  • 2 lbs Yukon Gold potatoes
  • 2 large fresh oranges
  • 1 cup diced red onion
  • 1 cup chopped celery
  • 3 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1/4 cup chopped fresh parsley or cilantro
  • Salt and pepper to taste

Instructions

  1. Wash the potatoes, cover them with cold salted water in a large pot, and bring to a boil. Reduce heat and simmer until fork-tender (15-20 minutes). Drain and cool before dicing into bite-sized pieces.
  2. Peel and segment the oranges over a bowl to catch the juice. Chop the segments into smaller pieces.
  3. In a bowl, whisk together olive oil, Dijon mustard, salt, pepper, and any reserved orange juice.
  4. In a large bowl, mix diced potatoes, celery, red onion, orange pieces, and herbs. Drizzle dressing over the mixture and toss gently until well combined.
  5. Cover the bowl and refrigerate for at least one hour for flavors to meld.
  6. Toss gently before serving on a platter.
