How to Make Almond Date Energy Balls
Place the Medjool dates, almonds, shredded coconut, vanilla extract, and sea salt into a food processor. Pulse until everything is finely chopped and the mixture sticks together, around 1-2 minutes.
Scrape down the sides of the food processor as needed. Continue processing until the mixture has a sticky, cohesive consistency that holds together well.
Using a tablespoon or your hands, scoop out manageable portions of the mixture.
Use your palms to roll each scoop into a lovely ball. Aim for golf ball-sized shapes for perfect snacking.
Arrange the energy balls on a parchment-lined baking sheet. Refrigerate for at least 30 minutes, letting them firm up before indulging.
