For Topping

  • Preheat the oven to 375°F (190°C) and grease a baking dish with a bit of oil or butter.
  • Season the chicken breasts with salt and pepper. In a skillet over medium-high heat, sear the chicken for 2-3 minutes per side until golden brown.
  • Sauté sliced mushrooms in the same skillet with melted butter until browned, about 5-7 minutes.
  • Add minced garlic to the skillet and cook for 1 minute until aromatic. Sprinkle flour over mushrooms and stir gently. Gradually whisk in chicken broth and heavy cream, allowing the sauce to simmer until thickened, roughly 5 minutes.
  • Assemble the dish by placing the seared chicken in the greased baking dish. Pour the creamy mushroom sauce over the chicken and top with shredded mozzarella and grated Parmesan cheese.
  • Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbly and golden brown.
  • Rest the dish for 5 minutes before garnishing with fresh parsley.
