  • 1 tablespoon Almond Butter optional

How to Make Pistachio Matcha Energy Bites

  • Prep Nuts & Oats: In a food processor, pulse together the pistachios and rolled oats until they form a fine crumb, about 10 seconds.
  • Blend in Dates & Matcha: Add the pitted Medjool dates and matcha powder into the processor. Blend for around 30 seconds until you have a moist, cohesive dough.
  • Mix Extra Ingredients: Transfer the mixture to a mixing bowl. Stir in vanilla extract, chia seeds, and a pinch of sea salt until well-combined.
  • Shape the Bites: Scoop tablespoon-sized portions of the mixture and roll them into smooth balls. Place on parchment paper to cool.
  • Roll in Coconut: If desired, roll the finished bites in shredded coconut for added texture and flavor.
  • Chill: Refrigerate the energy bites for at least 10 minutes to firm them up before indulging.

Notes
