Instructions
Making the Cookies
In a large mixing bowl, combine the strawberry cake mix, melted butter, and egg until smooth.
Add the softened cream cheese and mix until fully incorporated, creating a creamy, pink batter.
Cover the dough and refrigerate for at least 1 hour.
Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
Scoop the chilled dough into tablespoon-sized balls and roll them in powdered sugar.
Place them 2 inches apart on the prepared baking sheets.
Bake the cookies for 8–10 minutes until edges are set but centers still appear soft.
Once removed from the oven, let them rest for 1–2 minutes and then gently press a chocolate kiss into the center of each cookie.
Transfer the cookies to a wire rack to cool completely.
Dust with additional powdered sugar for a pretty presentation, if desired.
Notes
For best results, chill the dough to prevent spreading. Store in an airtight container at room temperature for up to 3 days.
