For the Greens

Instructions

How to Make Sausage and Tortellini Soup

  • Heat a large pot over medium heat, then add the Italian sausage. Cook for 5–7 minutes until browned and crumbled, then drain any excess fat for a cleaner flavor.
  • Add the diced onion and minced garlic to the pot. Sauté for 3–4 minutes, stirring often, until the onion becomes translucent and fragrant.
  • Pour in the chicken broth and the diced tomatoes, stirring to combine. Increase the heat until it reaches a gentle boil, then reduce it to a simmer.
  • Stir in the cheese tortellini and cook according to package instructions, usually 3-5 minutes, until they are plump and floating.
  • Gently fold in the fresh spinach and sprinkle in the Italian seasoning. Cook for an additional 2–3 minutes, just until the spinach wilts.
  • Taste your soup and adjust the seasoning with salt and pepper. Serve hot.
