For the Beef

  • 2 lbs Beef Chuck Roast Cut into 1-inch pieces
  • 2 cups Low-Sodium Beef Broth
  • 2 cups Dry Red Wine Or robust broth for non-alcoholic version

For the Vegetables

  • 3 large Carrots Sliced into thick rounds
  • 8 oz Baby Bella Mushrooms Quartered
  • 4 stalks Spring Onions Chopped

For the Aromatics

  • 1 large Yellow Onion Chopped
  • 4 cloves Garlic Minced

The Essentials

  • 4 sprigs Fresh Thyme Or 1 tsp dried thyme
  • 2 leaves Bay Leaves Remember to remove before serving

Instructions

Cooking Steps

  • Season the beef chuck roast with salt and pepper. Sear the beef in a skillet over medium-high heat for about 5 minutes until browned on all sides.
  • In the same skillet, add chopped yellow onion and minced garlic. Sauté for approximately 3 minutes until onions are translucent.
  • In the slow cooker, combine the seared beef, sautéed onions, sliced carrots, quartered mushrooms, chopped spring onions, thyme, bay leaves, red wine, and beef broth. Stir gently.
  • Cover and set the slow cooker to low for 8 hours or high for 4 hours.
  • Remove bay leaves before serving. Serve with mashed potatoes or crusty bread.

Garnish with fresh thyme sprigs for added flavor and presentation.
