Instructions
Cooking Steps
Season the beef chuck roast with salt and pepper. Sear the beef in a skillet over medium-high heat for about 5 minutes until browned on all sides.
In the same skillet, add chopped yellow onion and minced garlic. Sauté for approximately 3 minutes until onions are translucent.
In the slow cooker, combine the seared beef, sautéed onions, sliced carrots, quartered mushrooms, chopped spring onions, thyme, bay leaves, red wine, and beef broth. Stir gently.
Cover and set the slow cooker to low for 8 hours or high for 4 hours.
Remove bay leaves before serving. Serve with mashed potatoes or crusty bread.
Notes
Garnish with fresh thyme sprigs for added flavor and presentation.
