Ingredients

  • 4 large Hard-Boiled Eggs finely chopped
  • 1/2 cup Mayonnaise can substitute with Greek yogurt
  • 1 tablespoon Mustard preferably Dijon
  • 1 teaspoon White Vinegar or substitute with lemon juice
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Paprika for garnish
  • 2 tablespoons Chives optional, for garnish

Instructions

Preparation

  • Finely chop the hard-boiled eggs until they resemble small pea-sized pieces.
  • In a medium bowl, whisk together mayonnaise, mustard, white vinegar, salt, pepper, and paprika until smooth.
  • Gently fold in the chopped eggs until each piece is coated.
  • If a velvety texture is desired, pulse the mixture in a food processor briefly.
  • Transfer the dip to a serving bowl, garnish with paprika and chives, and chill for an hour before serving.

Notes

Chill for at least an hour for the best flavor. This dip can be prepared up to 24 hours in advance.
