How to Make Orange Almond Cake
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line it with parchment paper.
Boil the large oranges in water for about 30 minutes until soft. Let them cool, then halve and puree in a blender until smooth.
Mix together the ground almonds, baking powder, and salt in a bowl.
Whisk the eggs and granulated sugar in a separate bowl until pale and creamy.
Fold the pureed oranges and olive oil into the egg mixture.
Incorporate the almond mixture gradually into the wet ingredients, folding gently.
Pour the batter into your prepared pan and bake for 40-45 minutes.
Cool the cake in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
