How to Make Orange Almond Cake

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line it with parchment paper.
  • Boil the large oranges in water for about 30 minutes until soft. Let them cool, then halve and puree in a blender until smooth.
  • Mix together the ground almonds, baking powder, and salt in a bowl.
  • Whisk the eggs and granulated sugar in a separate bowl until pale and creamy.
  • Fold the pureed oranges and olive oil into the egg mixture.
  • Incorporate the almond mixture gradually into the wet ingredients, folding gently.
  • Pour the batter into your prepared pan and bake for 40-45 minutes.
  • Cool the cake in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
