Ingredients

For the Ham

  • 1 whole Smoked Pork Shoulder (Picnic Ham)
  • 1/2 cup White Wine Vinegar or apple cider vinegar
  • 2 pieces Bay Leaves
  • 1 whole Onion peeled

For the Glaze

  • 1 cup Brown Sugar can be substituted with honey or maple syrup
  • 2 teaspoons Ground Cinnamon
  • 1/2 teaspoon Ground Nutmeg
  • 1/2 cup Honey can be swapped with agave syrup
  • 10 pieces Whole Cloves for studding the pork

Instructions

Preparation

  • Place the smoked pork shoulder into a large pot. Cover fully with water, adding white wine vinegar, bay leaves, and a peeled onion. Bring to a boil, then reduce to simmer for 2 hours until tender.
  • Carefully remove the pork from the pot, reserving the flavorful stock. Place the pork shoulder in a roasting pan.
  • In a mixing bowl, combine brown sugar, ground cinnamon, ground nutmeg, and honey. Stir until you create a thick, sticky paste.
  • Remove the skin from the pork and make diagonal cuts into the meat to form a diamond pattern.
  • Rub the honey mixture all over the ham, pressing it into the cuts and studding with whole cloves.
  • Pour the reserved stock around the ham in the pan. Bake in a preheated oven at 375°F (190°C) for about 30 minutes, basting occasionally until golden and the internal temperature reaches 160°F (71°C).
  • Tent the ham loosely with foil and let it rest for 10 minutes before slicing.
