How to Make Spiced Hot Cross Buns
In a small bowl, combine instant yeast with warm water. Allow it to foam for about 5-10 minutes.
In a separate bowl, mix Greek yogurt, honey, and vanilla extract. Add this mixture to the foamed yeast and stir gently.
In another bowl, whisk together whole wheat flour, cinnamon, and nutmeg.
Gradually mix the dry ingredients into the wet ingredients until a shaggy dough forms.
Transfer the dough onto a floured surface and knead for about 8-10 minutes.
Fold the raisins or currants into the dough, ensuring they're distributed evenly.
Place the dough in a greased bowl, cover with a cloth, and let rise in a warm area for about 1-2 hours.
Once risen, punch down the dough lightly, divide into equal portions, and shape into rolls.
Cover the shaped buns and allow them to rise again for about 30-45 minutes.
Mix a small amount of flour with water to create a thick paste for piping crosses.
Preheat your oven to 375°F (190°C) and bake buns for 20-25 minutes.
Brush the warm buns with honey glaze after baking.
