Ingredients

For the Fish

  • 4 fillets Haddock Can substitute with cod or sole

For the Crunchy Topping

  • 1 cup Fresh breadcrumbs Panko breadcrumbs recommended
  • 1 tablespoon Lemon zest Use fresh for the best flavor
  • 1 tablespoon Flat-leaf parsley Can use dill or tarragon as substitutes
  • 1 tablespoon Chives Optional, but adds flavor
  • 1 teaspoon Fresh thyme leaves Dried thyme can be substituted
  • 1 clove Garlic Minced
  • 4 tablespoons Unsalted butter Melted, can use olive oil as a substitute
  • 2 tablespoons Olive oil Optional, can add more butter
  • to taste Sea salt
  • to taste Black pepper

Instructions

Preparation

  • Pat the haddock fillets dry using paper towels and place them in a greased baking dish.
  • In a medium bowl, mix breadcrumbs, lemon zest, parsley, chives, thyme, garlic, melted butter, olive oil, salt, and pepper.
  • Spread the breadcrumb mixture over the top of the haddock fillets, pressing down lightly.
  • Bake in a preheated oven at 400°F (200°C) for about 20 minutes or until the fish is opaque and flakes easily.
  • Serve with fresh lemon wedges and your favorite sides.

Notes

Can assemble the dish up to two hours in advance. Store leftovers in an airtight container for up to 3 days.
