Ingredients

For the Marinade

  • 4 pieces Boneless, Skinless Chicken Breasts
  • 2 tablespoons Fresh Lemon Juice About 2 tablespoons per medium lemon
  • 2 tablespoons Olive Oil Can substitute with canola oil
  • 3 cloves Minced Garlic Fresh garlic provides best flavor
  • 1 tablespoon Dijon Mustard Consider yellow mustard as a substitute
  • 1 teaspoon Dried Oregano Other herbs like basil can give a unique twist
  • 2 tablespoons Fresh Thyme Leaves Optional substitutes include basil or tarragon
  • Salt and Pepper Season to taste

For Grilling and Garnishing

  • 1 slices Lemon Slices For grilling and garnishing
  • 2 tablespoons Chopped Parsley Flat-leaf parsley is preferred

Instructions

Instructions

  • In a large bowl, combine fresh lemon juice, olive oil, minced garlic, Dijon mustard, dried oregano, and fresh thyme. Stir until well blended, creating a fragrant marinade.
  • Add boneless, skinless chicken breasts to the bowl, ensuring they are fully coated. Cover and refrigerate for 30 minutes to 2 hours for the best flavor infusion.
  • Get your grill hot and ready by heating it to medium-high. If using a stovetop grill pan, set it to medium heat.
  • Take the chicken out of the marinade, allowing excess to drip off—discard the marinade to prevent burning.
  • Place chicken on the grill and cook for about 6-7 minutes on one side. Flip and grill for another 6-7 minutes until the internal temperature reaches 165°F (74°C).
  • During the last two minutes of cooking, place lemon slices on the grill for a touch of char and flavor enhancement.
  • Once cooked, let the chicken rest for 5 minutes. Garnish with grilled lemon slices and chopped parsley before serving to impress your guests.

Notes

Serve with a drizzle of balsamic glaze for added sweetness if desired. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
