Instructions

How to Make Spiced Lamb Kofta Skewers

  • Prep the Mixture: In a mixing bowl, combine the ground lamb, grated red onion, chopped parsley, cumin, coriander, sumac, and chili flakes. Mix gently until just combined.
  • Shape Kofta: Wet hands to prevent sticking, and take small portions of the mixture. Form into elongated meatballs around the skewers.
  • Grill: Preheat the grill to medium-high heat. Cook skewers for about 12 minutes, flipping halfway through.
  • Prepare Yogurt Sauce: Mix together the plain yogurt, minced garlic, lemon juice, salt, and pepper until smooth.
  • Serve: Arrange kofta skewers on a platter with the yogurt sauce and garnish with pomegranate seeds.
