Ingredients

For the Crust

  • 1/2 cup Shortening Can be replaced with additional cold butter.
  • 1/2 cup Cold Butter Cubed and should be kept cold.
  • 3 cups Pastry Flour All-purpose flour may be substituted.
  • 1/2 cup Ice Cold Water Always use cold liquid.
  • 1 tbsp White Vinegar Can substitute with lemon juice.
  • 1 tsp Salt Essential for seasoning.

For the Filling

  • 8 large Apples Peeled and sliced. Granny Smith or Honeycrisp recommended.
  • 3/4 cup Granulated Sugar Adjust based on apple tartness.
  • 2 tsp Ground Cinnamon
  • 1/4 tsp Freshly Grated Nutmeg Ground nutmeg can be used instead.
  • 1/4 cup All-Purpose Flour Can use cornstarch as an alternative.
  • 1/2 lemon Lemon Juice From one lemon.

For the Topping

  • 2 tbsp Salted Butter Optional; can substitute with unsalted butter.
  • 2 tbsp 2% Milk Can substitute with any milk type.
  • 2 tbsp Coarse Sugar Can substitute with regular sugar.

Preparation Steps

  • In a large bowl, sift together the pastry flour and salt. Cut in the shortening and cold butter until the mixture resembles coarse crumbs. Gradually mix in ice-cold water and vinegar until it forms a dough, taking care not to overwork it.
  • Split the dough into two equal halves. Roll out one portion into a rectangle, spreading it with salted butter, a sprinkle of cinnamon, and granulated sugar. Roll it up tightly like a jelly roll, slice it into rounds, and arrange them in a 9-inch pie plate. Repeat this step with the second half of the dough to create the top crust.
  • Peel, core, and slice the apples. In a saucepan, combine the apple slices with flour, sugar, cinnamon, nutmeg, and lemon juice. Cook over medium-low heat for about 10-15 minutes, stirring occasionally, until the apples have softened.
  • Pour the warm apple filling into the bottom crust, dot it with small pieces of salted butter, and then layer the remaining cinnamon roll slices over the top. Brush the crust with milk and sprinkle with coarse sugar for a beautiful finish.
  • Preheat your oven to 425°F and bake the pie for approximately 40 minutes, or until the crust is golden brown and the apples are tender. If the edges begin to brown too quickly, cover them with foil to prevent burning.
  • Allow the pie to cool for at least 2 hours to set properly before slicing and serving.
