Ingredients

For the Salad

  • 2 cups Watermelon Radishes sliced thinly
  • 1 cup Citrus Segments fresh oranges or grapefruits
  • 1/4 cup Fresh Mint torn
  • 1/4 cup Scallion Greens chopped

For the Vinaigrette

  • 2 tablespoons White Miso or tahini for a nutty twist
  • 1 tablespoon Maple Syrup or agave syrup
  • 2 tablespoons Lemon Juice or lime juice
  • 2 tablespoons Rice Vinegar or apple cider vinegar
  • 2 tablespoons Tamari or regular soy sauce
  • 1 tablespoon Sesame Oil or olive oil
  • 2 tablespoons Olive Oil or avocado oil

For Garnish

  • 1 tablespoon Black and White Sesame Seeds or toasted nuts

Instructions

Preparation

  • In a bowl, combine white miso, maple syrup, lemon juice, rice vinegar, tamari, sesame oil, and olive oil. Whisk until smooth and creamy. Adjust seasoning with salt and pepper to taste.

  • Take your watermelon radishes and slice them thinly, about 1/8-inch thick. Arrange these colorful slices in a shallow bowl.

  • Segment fresh oranges or grapefruits and scatter them over the radish slices.

  • Drizzle the prepared vinaigrette over the sliced radishes and citrus segments. Allow the salad to rest for about 10–15 minutes.
