- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, melted
- ½ cup milk
- 1 tsp vanilla extract
- 1 egg
- 1 cup fresh or frozen blueberries
- 4 oz cream cheese, softened
- 2 tbsp powdered sugar
Instructions
1️⃣ Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
2️⃣ Mix dry ingredients: In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
3️⃣ Prepare wet ingredients: In another bowl, mix melted butter, milk, vanilla, and egg. Combine with dry ingredients.
4️⃣ Add blueberries and gently fold them into the batter.
5️⃣ Make cream cheese filling: Mix cream cheese with powdered sugar until smooth.
6️⃣ Assemble muffins: Fill each muffin cup halfway with batter, add a teaspoon of cream cheese mixture, and top with more batter.
7️⃣ Bake for 20-25 minutes until golden brown. Let cool & enjoy!
