- 2 tsp fresh thyme (or 1 tsp dried thyme)

Instructions
- Set the Instant Pot to sauté mode. Add olive oil, diced onions, and minced garlic; cook until fragrant (about 2 minutes).
- Stir in the cremini and shiitake mushrooms along with the diced carrots. Sauté for about 5 minutes until tender.
- Add the wild rice blend, salt, pepper, and thyme; mix well.
- Pour in vegetable broth and coconut milk; stir to combine.
- Seal the Instant Pot lid and set to manual high pressure for 30 minutes.
- Once cooked, carefully release pressure. Stir before serving and garnish with fresh herbs if desired.
