  • 1 cup shiitake mushrooms, diced
  • 1 cup wild rice blend
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup coconut milk
  • 1 cup carrots, diced
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Set the Instant Pot to sauté mode. Add olive oil, diced onions, and minced garlic; cook until fragrant (about 2 minutes).
  2. Stir in the cremini and shiitake mushrooms along with the diced carrots. Sauté for about 5 minutes until tender.
  3. Add the wild rice blend, salt, pepper, and thyme; mix well.
  4. Pour in vegetable broth and coconut milk; stir to combine.
  5. Seal the Instant Pot lid and set to manual high pressure for 30 minutes.
  6. Once cooked, carefully release pressure. Stir before serving and garnish with fresh herbs if desired.
