Instructions

  1. Preheat the oven to 425°F (220°C). Rinse and chop the cauliflower into florets, then pulse in a food processor until finely riced.
  2. Transfer riced cauliflower to a microwave-safe bowl, cover with a damp towel, and microwave for 3 minutes.
  3. Let cool slightly, then place in a clean kitchen towel and wring out excess moisture.
  4. In a large mixing bowl, combine dried cauliflower, eggs, cheese, green onions, panko, salt, and pepper; mix well.
  5. Form small patties from the mixture and place them on a parchment-lined baking sheet with space between each.
