- 1 block (14 oz) firm tofu

- 1 cup portobello mushrooms, chopped
- 2 cups marinara sauce (store-bought or homemade)
- 1/4 cup nutritional yeast
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp Italian herbs (basil, oregano, thyme)
- Salt to taste
Instructions
- Preheat the oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- In a food processor, blend the tofu, nutritional yeast, garlic, and salt until smooth and creamy.
- In a skillet over medium heat, add olive oil and sauté the mushrooms and spinach until tender (about 5 minutes).
- Spread a thin layer of marinara sauce in the baking dish. Layer with noodles, half of the tofu mixture, half of the sautéed veggies; repeat layers ending with noodles topped with marinara sauce.
- Cover with foil and bake for 40 minutes; remove foil and bake for an additional 10 minutes until bubbly.
- Let cool slightly before slicing; serve warm garnished with Italian herbs.
