  • ¾ cup unsweetened cocoa powder

  • 1 cup brewed espresso (cooled)
  • 3 large eggs
  • 1 cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 2 tbsp brewed espresso

Instructions

  1. Preheat oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, sift together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla and espresso.
  4. Gradually combine dry ingredients with wet, alternating with milk until smooth.
  5. Divide batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Let cool completely.
  6. For frosting, whip mascarpone, heavy cream, powdered sugar, and espresso until smooth.
  7. Once cooled, layer the cake with frosting in between layers and on top.
