- 8 oz mascarpone cheese
- 1 cup heavy cream
- ½ cup powdered sugar
- 2 tbsp brewed espresso
Instructions
- Preheat oven to 350°F (175°C) and grease two round cake pans.
- In a bowl, sift together flour, cocoa powder, baking powder, and salt.
- In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla and espresso.
- Gradually combine dry ingredients with wet, alternating with milk until smooth.
- Divide batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Let cool completely.
- For frosting, whip mascarpone, heavy cream, powdered sugar, and espresso until smooth.
- Once cooled, layer the cake with frosting in between layers and on top.
