Description

Red Wine Braised Octopus is a stunning Mediterranean-inspired dish that features tender octopus simmered in a rich, aromatic red wine sauce. This gourmet recipe is surprisingly simple to prepare, making it perfect for impressing guests or enjoying a cozy evening at home. The combination of garlic, tomatoes, and herbs creates an unforgettable flavor profile, especially when served with crusty bread to soak up the luscious sauce.

Ingredients

Scale
  • 23 lbs fresh or frozen octopus
  • 1 cup dry red wine
  • 2 tbsp extra virgin olive oil
  • 1 large onion, diced
  • 45 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Clean the octopus under cold water if fresh; thaw and pat dry if frozen.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Sauté diced onion until translucent (about 5 minutes), then add minced garlic and cook until fragrant.
  3. Add the octopus to the pot and sear both sides for about 3 minutes until lightly golden brown.
  4. Pour in red wine and crushed tomatoes, stirring to combine while scraping the bottom of the pot.
  5. Season with bay leaves, salt, and pepper. Bring to a gentle boil, then reduce heat to low and cover. Simmer for about 1 hour or until the octopus is tender.
  6. Remove from heat, let rest for a few minutes, serve with fresh herbs and crusty bread.
