  • 1 ½ cups whole milk ricotta cheese
  • 2 cups shredded full-fat mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 2 cups marinara sauce
  • 3 cloves garlic, minced
  • 2 large eggs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using traditional noodles, cook according to package instructions until al dente.
  3. In a skillet, heat olive oil over medium heat; add garlic and sauté for one minute. Add spinach and cook until wilted (about three minutes).
  4. In a bowl, mix ricotta, sautéed spinach, eggs, half of the mozzarella, salt, and pepper until combined.
  5. In a baking dish, layer marinara sauce, noodles, half of the cheese mixture; repeat layers until topped with noodles and remaining sauce. Sprinkle with remaining mozzarella and Parmesan.
