  • 1 cup uncooked quinoa
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (diced)
  • 1/4 cup red onion (finely chopped)
  • 1 cup bell pepper (diced)
  • 1/2 cup fresh parsley (chopped)
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • Salt & pepper (to taste)

Instructions

  1. Rinse quinoa under cold water to remove bitterness. In a medium saucepan, bring 2 cups of water to a boil. Add rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes until all water is absorbed.
  2. While quinoa cooks, chop cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  3. Once quinoa has cooled slightly, combine it with the chopped veggies in a large bowl.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle over the salad and toss gently to coat.
  5. Chill in the fridge for at least 10 minutes before serving to allow flavors to meld.
