  • 4 cod fillets (6 oz each)
  • 2 cups chopped bok choy
  • 2 tbsp grated fresh ginger
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey (or maple syrup)
  • 3 cloves garlic, minced
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar

Instructions

  1. Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Wash and chop the bok choy into bite-sized pieces.
  3. In a medium bowl, whisk together soy sauce, honey, grated ginger, minced garlic, rice vinegar, and sesame oil until combined.
  4. Place cod fillets in the baking dish and pour half of the glaze over them. Let marinate while preparing the bok choy.
  5. Bake the cod for 12-15 minutes until flaky.
  6. In a skillet over medium heat, sauté bok choy in a splash of oil for 3-4 minutes until tender-crisp.
