- 1/4 cup sour cream
- 1 cup shredded cheddar cheese (divided)

- 2 tbsp chopped chives or green onions
Instructions
- Wash and dry the russet potatoes, then pierce them multiple times with a fork.
- Rub the potatoes with olive oil and sprinkle with salt. Place in the air fryer at 400°F (200°C) for 35-40 minutes until tender.
- Allow the potatoes to cool slightly, then halve them lengthwise and scoop out the flesh into a bowl, leaving a small border.
- Mash the potato flesh with butter, sour cream, half of the cheese, and bacon bits until creamy.
- Spoon the mixture back into the skins, topping with remaining cheese and bacon bits.
- Return to air fryer at 350°F (175°C) for 10-12 minutes until heated through and cheese is melted.
