  • 1 cup mixed olives (Kalamata and green)
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 14 oz canned diced tomatoes
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp cinnamon
  • 1 tsp paprika
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic. Measure out your spices.
  2. In a large pot, heat olive oil over medium-high heat. Sear the lamb in batches until browned on all sides. Remove and set aside.
