- 2 (6 oz) salmon fillets
- 1 medium spaghetti squash
- 2 fresh oranges (juice and zest)
- 2 tbsp raw honey
- 3 cloves garlic (minced)
- 1/4 tsp cayenne pepper
- 2 tbsp olive oil
- 2 tbsp low-sodium soy sauce
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Lightly spray a baking dish with nonstick spray.
- Cut spaghetti squash in half lengthwise, scoop out seeds, drizzle with olive oil, salt, and place cut-side down in the baking dish. Roast for 40-45 minutes until tender.
- In a bowl, whisk together orange juice, honey, minced garlic, soy sauce, cayenne pepper, and orange zest.
- Heat olive oil in a skillet over medium-high heat. Season salmon fillets with salt and pepper; cook skin-side down for about 4 minutes until golden brown.
- Flip salmon, pour half of the orange glaze over it, and cook for an additional 3 minutes until cooked through.
- Fluff roasted spaghetti squash with a fork and serve salmon on top drizzled with remaining glaze.
