  • 6 slices thick-cut bacon
  • 4 cups mixed greens (romaine, arugula, spinach)
  • 1 cup cherry tomatoes, halved
  • 2 hard-boiled eggs, sliced
  • 1 avocado, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook bacon in a skillet over medium heat until crispy. Transfer to paper towels to drain.
